With Component Video (3 RCAs)
The Luma (Y) signal goes through one cable and modified versions of the Re (R-Y) and Blue (B-Y) signals go through the other two cables.  This avoids multiple stages of modulation, resulting in the best picture possible.

With S-Video
The picture is transmitted through two signal streams, referred to as "Luma" (black ad and white) and "Chroma" (color) information.  This separation avoids the "composite modulation" stages and gives you a considerably sharper, clearer picture with less dot crawl than composite video.
